About ShrutiFrom crunching numbers and planning pensions to moving into the colorful world of food, the journey was in fact very smooth for me. In a way I am still dealing with numbers in measurements to balance the nutrition, and working on ways to make the path to retirement and beyond joyful and healthy! This journey changed me from being someone who never cared about what she was eating to a new person who is not over obsessed but mindful about eating. I still eat things that I like, but now I am more careful on balancing my diet. That’s what I want my friends and readers to achieve. If you are looking for healthy, balanced and easy meatless recipes, this is the perfect destination for you.

Health is important, however, overstressing or over thinking about food makes the whole idea futile. My food philosophy is maintaining balanced diet, sourcing locally grown/organic ingredients, cooking with a smile and eating with your loved ones around :). I am always available to talk about food and health (I am known for giving unsolicited advice!). Feel free to talk/write to me about anything and everything related to food. Quinoa Salad

Quinoa Salad with Dill Yogurt Dressing

Quinoa is back in my kitchen and I am happily cooking it. Last summer I made quite a few dishes with quinoa. From salad, burger, Indian style porridge to alternative for rice, almost everything I made had quinoa as an ingredient. I am trying to compile some of my easy recipes and put them here for everyone to try. This recipe is really easy and requires 5 minutes to finish if you already have cooked quinoa. Cooking for oneself can be a tough job. I always keep some cooked quinoa and beans in my fridge and make salad with some veggies on the side. Gives me balanced nutrition and keeps me healthy.

Serving size : 2 – 3 cups

½ cup quinoa
½ tsp turmeric
2-3 small radishes, small cubed
½ cup cucumber, small diced  
¼ cup red onions
1 green chilli (remove the seeds and slice) (optional) / ¼ teaspoon cayenne powder
1 tsp fresh toasted cumin powder 
½ tsp apple cider vinegar
¼ cup Greek yogurt
2 tbsp finely chopped dill
Salt acc to taste

  1. Wash quinoa and cook it in a pan with turmeric and 1 cup water. Start heating it with open pan and when the water starts boiling, cover it with lid and cook on a low flame. This will take 20 – 25 minutes.
  2. Once quinoa is cooked, fluff using a fork and let it cool down/chill in refrigerator.
  3. Add the radishes, cucumber, onions, green chilli, yogurt with dill leaves, vinegar, salt and cumin. Mix well and enjoy!

 

Spaghetti

Last weekend I watched Chef, an inspiring movie which follows the life of Chef Carl Casper. During one of the scenes he is shown making spaghetti aglio e olio, a traditional Italian dish which is known to delight the senses by its simplicity of its flavors. The scene in the movie inspired me to make my own spaghetti aglio e olio as soon as I returned home! This is one of my favorite Italian dishes and it reminds me of so many different places I have had this dish and all the memories I have attached to it. Garlic, olive oil, Parmesan cheese and parsley – my favorite way to eat spaghetti….

Summers are finally here and gazpacho is a perfect dish for a hot afternoon. I am addicted to gazpacho in summers. Its healthy, raw, quick to make and so very refreshing. The bright pinkish-red color of the dish cheers me up and the tasteful combination of raw red onions with sweet watermelon emits bursts of tantalizing flavors with each sip. Chickpea Salad with Za'atar

Roasted Chickpea Salad with Za’atar

Za’atar is one of my favorite spice blends; it’s full of flavor, and goes perfectly with mint and lemon. This recipe blends crunchy vegetables with garbanzo beans that have been roasted with za’atar. It’s very easy and quick to make, and can be eaten both warm and cold. If desired, add some crumbled feta cheese for creaminess.
