Soba/ Buckwheat Noodles (1 Serving = A bunch of soba noodle through loop formed with your thumb and forefinger)
1 tsp sesame oil
1 tbsp minced garlic
1 tbsp thinly sliced ginger
1 tbsp sesame seeds
2 tbsp mirin/ sweet rice vinegar/ wine vinegar = 1 tbsp apple cider vinegar + ½ tsp brown sugar
1/8 cup light soy sauce
1 piece of kombu (optional) (soaked in water for 5 minutes and then thinly sliced)
1 cup thinly sliced mushrooms (optional)
1 /2 cup zucchini (thinly sliced)
1 cup snap peas
1 cup cooked edmame (cook edmame and snap peas in water until soft)
1 cup scallions
1 tablespoon any kind of chilli paste / sweet chilli paste/ sriracha or any paste which is sweet and sour at the same time.
¼ Cup Crushed peanuts
Salt and lemon to taste…
