Poha is one of our favourite breakfast and weekend evening snack. Its quick to prepare, tastes yummy and is quite healthy when prepared with vegetables!. You can buy Poha and spices in any Indian food store.
Serves: 3 Cup
2 cup poha ( flattened rice)
2 thin green chillies cut julienne style
1 cup cut onion 1/4 inch
1 cup sweet pea
½ cup carrot cut into small square pieces
½ cup green pepper (capsicum) cut into small pieces
½ cup corn
1 teaspoon oil (vegetable or olive) and ½ teaspoon butter or Indian Ghee
2 teaspoon salt
1 lime cut into round pieces
1 teaspoon sugar
½ teaspoon mustard seeds
1/4 teaspoon turmeric
- Take a medium size pan and add butter and oil in it. Now add mustard seeds and once mustard seeds start popping, add onion, salt and sugar to it at a low flame for 3 – 4 minutes.
- Add rest of the vegetables to it and let it cook for 10 – 15 minutes on a low flame.
- When the vegetables are cooking, take poha in a strainer and run it under cold water. While running under the water, use your fingers to check if the rice is soft. They should be partially soft. Keep it on the side for at least 10 minutes for it to dry. After that run your fingers through them so that they don’t stick together.
- Once the vegetables are cooked add turmeric to it and then add poha and mix it well. Let it cook for 1-2 minutes and then turn off the flame.
Serve it with lime on the side and garnish with coriander leaves! You may also add some bhujia/sev on top to enhance the taste and add crispiness.
